The options in Iceland for hiking and trekking are countless and you can even find multiple short few hour hikes within an hour from Reykjavik. In the countryside, we highly recommend looking into these few areas depending on what you are looking for: The Laugavegur trek (named by National Geographic as the top 20 treks in the world - page 3), Fimmvörðuháls hike, Hornstrandir Nature Reserve in the Westfjords, Ásbyrgi Canyon and Skaftafell (Vatnajökull Glacier National Park). However, these are just a few of many excellent options to explore.
